Mayo North East LEADER Partnership Co. Social Inclusion and Community Activation Programme (SICAP) is delivering FREE professional cookery & kitchen Skills training course in BALLINA in late 201

 Professional Cookery & Kitchen Skills Training for Employment in the Hospitality,

Catering, Food Service, Food Business Start Up Sector

The aim of the programme is to give learners an overview of the procedures involved in preparing food. To develop a solid foundation in cookery skills & strong organisational ethos

This course will provide learners with a blend of training, hands on practical cooking, classroom theory and employer based work experience in their local area and will include:

  • Comprehensive theory book – Practical Cookery
  • Kitchen induction training
  • Knife skills
  • Classic vegetable cuts
  • Cooking techniques boiling, poaching, braising, grilling etc
  • Overview on meat, poultry, fish & shellfish cooking
  • Salads & presentation
  • Overview on basic pastry, scones & bread doughs
  • International cooking styles
  • Menu & food costing

Learners who successfully complete this programme will:

  • Develop their understanding of health and hygiene related to the kitchen
  • Develop the skills needed to prepare food creatively, efficiently and safely
  • Contribute to the team production of a meals.

 

 

 

 

Over five full days starting at 10am & finishing at 5pm this is areas/techniques a learner will cover on a typical

  1. Kitchen induction, H&S, Knife skills, veg cuts, cooking skills, soups
  2. stewing, braising meat & poultry – fish prep, cooking & cold sauces
  3. grill skills, potato sides, marinades, knife skills, stir fry dishes
  4. Salads, shellfish cookery, poaching, pastry, scones & meringues
  5. Breads, international cooking, dietary requirements, food costings

This is a hands on programme with the learner working from recipes & using techniques demonstrated by the tutor

The learner will also be responsible for cleaning as they go & working as a team for setting up & closing down the kitchen.

Learners will be practising basic preparation & setting up their work stations “mise-en-place” & the importance of continuity & workflow.

Mayo North East LEADER Partnership Co. Social Inclusion and Community Activation Programme (SICAP) is delivering FREE Barista Skills training course in BALLINA

 

 2 ONE DAY COURSES ON

TUESDAY 25th OCTOBER 10am – 4.30pm

WEDNESDAY 26th October 10am – 4.30pm

 

Successful course participants will receive a Certificate of Achievement from Dublin Barista School

 

Strictly limited to 6 course participants each day

 

Course modules will include:

  • Understanding Espresso equipment
  • Drinks menu in detail – Latte/Cappuccino/Macchiatos
  • Machine care and cleaning
  • Understanding the Espresso grinder
  • Introduction to Latte designs
  • Understanding Cafế work flow
  • Espresso techniques
  • Milk chemistry
  • Milk texturing techniques
